Spoonline | Guatemala | Cubulco

from $18.00

Spoonline Bistro has brought imaginative, classy, locavore cuisine to the Glacier Valley community. It remains one of the only places in Girdwood to find a decent glass of wine in a cozy, chic setting. They are also our first wholesale account—giving us a shot based on a few nibbles of freshly roasted coffee beans during our first sales pitch ever (we still don’t get why all chefs immediately want to eat the beans). Spoons has been serving our Guatemalan medium roast for the past 3 years, creating a perfect compliment to their weekend brunches and house-crafted desserts. This coffee represents the synergy within our community and the connections we share across the planet.

Impact (from our importer):

Cubulco is a small town in the heart of Guatemala, located in the department of Baja Verapaz. A high percentage of the population is indigenous, with the majority being of Achi Mayan descent. Altitudes range from 1600 to 1800masl, and small-sized farms dot the highlands. Most farmers employ traditional agricultural practices and operate their own wet mills in the region.

Cubulco is one of Genuine Origin’s first community lots, crafted by our amazing quality control lab in Guatemala City. They work with multiple small producers to develop a consistent, high-quality blend every year. The main contributors to the Baja Verapaz Cubulco lot include Las Anonas, Las Naranjas, La Esperanza, Grano de Ora, Finca Las Piedras, and other smallholders. In the cup, Cubulco offers rich notes of dark chocolate, almond & red currant with a medium acidity and medium body.
